This perfect little tea sandwich elegantly shows off one of the most rich tastes of the summer - tomatoes. The best tasting tomatoes can be found at a farmers market - try heirloom tomatoes if you can find them.
Tomato Sandwich
2 large tomatoes
Salt and pepper
8 slices of thinly sliced white or brown bread
Place tomatoes in a large bowl in the kitchen sink and cover with boiling water for one minute. Pour off the boiling water. Now rub your fingers over the skin on the tomatoes - it should slide right off! Pat dry with paper towels. Slice the tomatoes very thinly and set aside.
Butter all slices of the bread on one side. Place the tomatoe slices on the bread and sprinkle with salt and pepper. Cover with another slice of bread and press down firmly.
Trim off the crusts with a sharp knife and either cut into triangles or use a cookie cutter to cut the sandwich into pretty little shapes.
