A wonderful savory sandwich with the delicious taste of fresh goat cheese, raisin bread and nuts. Absolutely delectable and verifiably elegant!
Goat Cheese and Watercress Sandwich
1 log of soft fresh goat cheese (like Montrachet) room temperature
1/2 cup watercress leaves, chopped
8 slices of cinnamon-raisin bread, thinly sliced
3 tablespoons unsalted butter, room temperature
1/2 cup toasted pecans, chopped
salt
Mix goat cheese and watercress together. Season with salt.
Spread the mixture evenly over 4 slices of bread. Butter the remaining 4 slices and sprinkle with the chopped pecans. Trim edges from the sandwiches and cut diagonally in half. Garnish with watercress.
