Cucumber Tea Sandwich

This classic tea sandwich is a favorite for a reason! Not only do the fresh flavors shine through, but it is very simple to put together!

Cucumber Tea Sandwich

1/2 seedless cucumber, peeled and very thinly sliced
1/2 cup unsalted butter, room temperature
1/2 cup watercress leaves, coarsely chopped
16 slices of white bread - use very good quality
salt
1/2 cup alfalfa sprouts

Cucumbers are full of a lot of water, so the first step is to remove some of the water so it doesn’t make the sandwiches soggy. Place the cucumber slices between layers of paper towels.

Combine the butter and watercress in a small bowl. Spread the butter mixture on the first eight slices of bread, then top with the cucumber slices. Sprinkle with salt and cover with the sprouts. Top the sandwiches with the remaining eight slices of bread.

Using a sharp knife, cut the crusts from the sandwiches. Then cut the sandwiches diagonally two times, so there are four mini sandwiches out of each large sandwich.
